Roasted pears with gorgonzola, cranberries, and honey
With holiday season approaching really fast, I want to share with you my favorite appetizer/dessert. It has this perfect combination of sweetness and savory, plus it pairs perfectly with wine. So believe me, you will want to make a double batch!
You will need:
3 firm pears, peeld, cut in half, core and seeds removed. I would also suggest to cut a small slice from the backside, so pears would sit in a baking dish without tipping over.
1/3 a cup of dried cranberries
1/3 a cup of walnuts
1/3 a cup of crumbled gorgonzola
3 tablespoons of sweet dessert wine like port
1/3 cup of apple cider
3 tbsp brown sugar
arugula
lemon
olive oil
honey
Pomegranate seeds for garnish
Mix together gorgonzola, walnuts and cranberries, and top each pear half with the mixture.
In a separate bowl mix together wine, apple cider and brown sugar.
Pour the mixture over the pears and put in the oven preheated to 375F for 25-30 minutes.
While the pears are in the oven, braise them with liquid in the pen couple of times.
Let them cool slightly after pears are done.
On a plate make a bed out of arugula, drizzle it with lemon juice and olive oil. Put pears on top and garnish with pomegranate seeds and honey.
